Product Details

This is a delicious pasta salad requiring bay scallops that we've designed to celebrate 8 major lighthouse regions of America. Once a year we donate part of the profits to help save and maintain these wonderful old landmarks that helped save lives in an early time in our history. Each mix includes a miniature bottle of zesty Peter's Beach Sauce. Serves 6-8.

Lights Of Lake Michigan Pasta Salad

 

Ingredients to have on hand

 

2 qts. Water with 1 tsp. salt

1 lb. fresh scallops

1 Tbl. Butter

¼ c. canola or vegetable oil

1 Tbl. Fresh lemon juice

3 Tbl. Apple cider vinegar

1 Tbl. Hone

Spice packet (included)

¼ tsp. salt

Contents of small sauce bottle (included)

½ medium red onion

½ large green pepper

1 medium cucumber

1 medium ripe tomato

1 small jar pimentos – chopped

 

Directions

 

1)     Ina large pot, bring 2 quarts salted water to a boil.  Add pasta.  Stir and cook approximately 10 minutes until al dente.  While pasta is cooking, prepare the scallops first, then the dressing and then the vegetables.

2)     Place butter in a small skillet on medium heat.  Lightly salt and pepper scallops and sauté for 3-5 minutes.  Set aside.

3)     In a small bowl, whisk together the oil, lemon juice, vinegar, honey, contents of spice packet salt, and contents of small sauce bottle.  Set aside.  Slice onion and green peppers into thin ¼ inch rings and then into smaller bite size pieces.  Quarter cucumber and slice into 3/8 inch pieces.  Core tomato and slice into small, bite size pieces.

4)     Drain pasta briefly.  Now the fun part!  Place the drained (but still hot) pasta into a large serving bowl.  Re-whisk dressing just before drizzling it over pasta.  Mix gently and allow to sit for three minutes so that the pasta absorbs all those great spices and flavors.  Using a slotted spoon, place the scallops into the bowl along with veggies and the pimentos and blend gently one more time.  Cover and chill for one hour before serving.

 

This is wonderful centerpiece salad, perfect for the family picnic at the beach.  Great served with our Marin County Carrot Cake and big cold pitchers of fresh lemonade and watermelon for dessert. 

 

Serves 6-8.  Enjoy!

 

Contents:  All natural enriched semolina flour (ferrous sulfate, niacin, thiamine mononitrate, and riboflavin), spray dried tomato, spinach and beet powders, water, spices, dried tomatoes, black pepper, onion powder, onion flakes, and garlic.
