Peter’s Carolina BBQ Slow Cooker Pulled Pork

Serves 8

3 lb Pork Shoulder cut into 2 to 3 inch cubes

1.5 cups Peter’s Carolina BBQ Sauce - western style

½ cup Sugar

½ cup Orange juice

8 Potato Buns

2 pints Coleslaw


Directions:

1. Marinate the cubed pork shoulder in Peter’s Carolina BBQ Sauce overnight in the fridge.

2. The next day, place pork and remaining ingredients in your slow cooker. Mix well and cover.

3. Turn slow cooker on high for one hour and then turn down to low and cook for 4-5 hours.

4. Using a slotted spoon, transfer cooked pork to cutting board to cool.

5. Transfer sauce into small bowl. Allow to cool and skim off the fat.

6. Chop or pull the pork into the size of green peas.

7. Return chopped/pulled pork to the slow cooker. Pour some of the sauce over the pork (to taste) and turn temperature to low until ready to serve.

8. Place pulled pork on bun topped with coleslaw. Serve with corn on the cob, potato salad, and hush puppies. Napkins are a must!
