Peter's Carolina BBQ Skillet Sausage Over Penne

1 pound Sweet Italian Sausage

¼ cup Olive Oil

3 clove Garlic- minced

2 cup Julienne Onions

½ cup Peters Carolina BBQ Sauce – western style

2 cup Tomato Sauce

2 cup Zucchini Slices

1 lb Penne Pasta

salt and black pepper to taste


  • 1.Heat large skillet over medium high heat, with oil
  • 2.Place sausage in pan and brown on both sides, about 4 minutes per side. Keep covered.
  • 3.Add the onions and garlic sauté for several minutes.
  • 4.Pour our Peters Carolina BBQ Sauce and tomato sauce over the sausage and cover with lid.
  • 5.Over a low heat simmer the sausage until it reaches an internal temperature of 155°, about 20 minutes.Season to taste.
  • 6.While the sausage is simmering bring 1 gallon of water to a boil. Add salt as desired to the water then boil pasta according to the manufactures recommendations. When the pasta is al dente add the zucchini to the boiling pasta and drain immediately.
  • 7.Sliced the sausage and toss sauce with drained pasta in pan to flavor it.
  • 8.Serve pasta with grated Parmesan cheese on the side.
