Peter’s Carolina BBQ Grilled Salmon Over Fettuccine

Serves 8

8 ea - 5 oz salmon fillets – boneless a and skinless

¾ cp Peter’s Carolina BBQ Sauce - western style

2 lb fettuccine pasta

1 pint heavy cream or half/half

2 tbsp minced garlic

1 tbsp cracked black pepper

1 bunch chives – sliced


1. Marinate the salmon in our Peter’s Carolina BBQ Sauce for 30 minutes.

2. Preheat the grill.

3. Bring a gallon of salted water to a boil in a large pot.

4. Cook the pasta to al dente – firm to the bite.

5. Drain and keep the pasta warm – do not rinse.

6. In the same pot that the pasta was cooked in – heat the cream, garlic, and black pepper. Slowly bring to a simmer and add the cooked pasta to this sauce mixture. On medium low heat, carefully simmer until the sauce begins to thicken. Remove from heat.

7. Remove the salmon from the marinade and grill for 3 minutes per side. Baste with the marinade every 30 seconds.

8. Place ½ cup portions of the finished pasta onto plates. Sprinkle with fresh chives. Place the salmon on top of the pasta and serve.
