Peter's Carolina BBQ Creole Chicken

Serves 4 - 6

1 ½ pound Boneless and Skinless Chicken Thighs

2 tsp Paprika

1 tsp Salt

1 tsp Black Pepper

1 tsp Granulated Garlic

2 tbsp Butter

1 cup Diced Onions

1 cup Diced Bell Peppers

½ cup Diced Celery

¼ cup Peter’s Carolina BBQ Sauce – western style

½ cup Tomato Sauce

salt and black pepper to taste


1. Prepare a seasoning blend of the paprika, garlic, salt and pepper. Season the chicken thighs.

2. Heat large skillet over medium high heat, add butter.

3. Place chicken in pan and brown on both sides, about 3 minutes per side.

4. Add the onion, peppers and celery, stir and sauté for several minutes.

5. Pour our Peters Carolina BBQ Sauce and tomato sauce over the chicken and cover with lid.

6. Over a low heat simmer the chicken and vegetables until the chicken reach an internal temperature of 165, about 20 minutes. Season to taste.

7. Served over steamed rice.
